Ingredients

  • 4 4 large egglarge eggs
  • ½ tsp ½ tsp sea salt
  • ¼ tsp ¼ tsp ground black pepper
  • 2 oz. 55 g butter, at room temperature
  • 1 (7 oz.) 1 (200 g) avocadoavocados
  • 1 tbsp 1 tbsp fresh parsley, chopped (optional)
  • 4 oz. 110 g smoked salmon

Making low carb simple

Instructions

  1. Place the eggs in a pot carefully. Cover with cold water and place on the stove without a lid. Bring the water to a boil.

  2. Lower the heat and let simmer for 7-8 minutes. Remove the eggs from the warm water and place them in a bowl with ice-cold water to cool.

  3. Peel the eggs and chop them finely. Mix eggs and butter with a fork. Season to taste with salt, pepper, and other flavors of your choice, see different suggestions below.

  4. Serve the egg butter with a side of diced avocado and finely chopped parsley and a few slices of smoked salmon.

    I love this meal. It's a quick and easy lunch, or dinner when everyone else wants to eat something that I can't. It is SO very filling, though.

    this was nice but 70g butter plus a tablespoon of oil. I only added 5g butter and it was still rich. I can't imagine it with 70g. Could make one nauseous.

    also to add there are 939 calories per serve if made according to the recipe. If you were trying to lose weight you would have nearly a days worth of calories just in this recipe.

    Delicious recipe, but waaay too much butter... Just typed the recipe into myfitnesspal and it calculated 900+ calories per single servicing. :o Skipping lunch today (and part of dinner!) ;)

    Not about calories I thought. So how many people are losing weight on this diet and How healthy is it. If Fat is a concern for cholesterol?

    I opted to mash my eggs with Diet Doctor mayonnaise instead of the butter. Glad I did after reading the comments. Also tasted better and was still high in fat.

    Ooft... very filling breakfast but after reading the comments i opted to use 75g of butter which was still too much, was hard pushed to eat it. When making again i would probably mash the eggs with DD Mayo or something similar

    I had never heard of "egg butter" before, but ran across the recipe two times today! The other version was from Almost Bananas, a blog about Slovakian food and culture. Another example of high-fat traditional foods. That recipe used slightly less butter and added some mustard and minced onions for flavor. Another good point was to not add salt until you think about your butter. Most American butter is salted, so may not need extra salt. That author spread a thick layer on bread. This might be more appealing rolled up in letttuce or thin, lean lunch meat (ham or turkey).

    I agree that one serving, as written, would feed 3 or 4 people!

    Nice recipe but I agree on the butter, I used 30g and it was still very rich. Would prob use 20g next time

    Oooh I feel ill and I only used 40g butter with no olive oil.

    Made it with butter as the recipe said but was nearly sick! Remade the eggs and probably used about 5 grams, much better and tastier, but I think next time I will scramble my eggs rather than boil and mash. Very tasty though and filling :-)
