Crispy Chili Lime Chickpeas

Roasted chickpeas are my jam and judging by the popularity of my Crispy BBQ Chickpeas and Crispy Ranch Chickpeas... you guys love them too! They are such a delicious, high protein, and easy to make snack. They come together in no time, are inexpensive to make, and are great on so many things. You can use them as salad toppers, on buddha bowls, or even just as a snack. Any way you eat them they are downright addictive.

I did some experimenting with new flavors and my new favorite is my Chili LimeCrispy Chickpea recipe. It's perfectly flavorful and lime-y... and super easy to put together!

Why you should try my Chili Lime Crispy Chickpea recipe...

If you haven't made roasted chickpeas yet, it is really simple. You just start with a can of rinsed and drained chickpeas. The trick is to get them as dry as possible at this point so they will crisp up in the oven. I like to leave them on the counter to dry for a while or really take a towel to them if I don't have time to wait. That's the key to any good crispy chickpea recipe!

The Chili Lime combo is a nod to all things SUMMER! I love limes year-round but have a special affinity for them when the weather is warm. The simple chili seasoning matches perfectly with the lime.

All you do to make them is toss the dried chickpeas in olive oil, spices, and lime! Then you roast them to perfection. Another pro tip is to hang around the oven near the end of the cooking time and check them frequently. You can even start taking some of the browner ones off the tray and allow the rest to crisp up. You can go from soggy chickpeas to burnt chickpeas pretty quickly... and you want to catch that CRISPY window.

Instructions

  • Lay the chickpeas on paper towels and get as much moisture off them as possible. If you have time allow them to sit and dry for a few hours. The drier they are, the crispier your chickpeas will be.

  • Preheat the oven to 425 degrees.

  • Toss the dried chickpeas in the spices, olive oil, salt and lime.

  • Roast for 25 minutes. Shake the pan and roast for 20 minutes more or until the chickpeas are crispy. Watch carefully near the end because there is a fine line between crispy and burnt!

  • Allow to cool and store in an airtight container.

Notes

** If your lime doesn't have a lot of juice, you might want to use the whole one!

FAQs

Why are my chickpeas not crispy? ›

The #1 crispy tip is to rinse, drain really well, then dry really well. Like, really, really well. The less moist (ew, sorry) the chickpeas are, the crispier they will become! Once your chickpeas are dry, this brings me to tip #2: Peel the skins!

How do you soften crispy chickpeas? ›

Add 1/2 teaspoon baking soda for every 15-ounce can drained beans (1 1/2 cups). Bring to a boil, then check every couple of minutes by removing a bean from the pot with a slotted spoon and (when it's cool enough to handle) squeezing it between your fingers to determine if it is sufficiently tender.

Why add baking soda when cooking chickpeas? ›

By adding baking soda, you are increasing the pH of the water and making it more alkaline. This helps break down the pectin in the chickpeas which softens their skins better and faster. This is especially important when you are making hummus and want the creamiest consistency possible.

How to make super soft chickpeas? ›

Soak 1/2 cup dried chickpeas for 12 hours. Drain, rinse, and add the soaked chickpeas to a pot. Cover by a few inches with water, and add 1/2 teaspoon salt. Bring to a boil, reduce heat, and cook at a simmer until tender, about 90 minutes to 2 hours.

Why are my dried chickpeas still hard after cooking? ›

My beans are not softening: If the beans are not softening, you may be using old beans, or your water is high in minerals (hard water). Add 1/4 teaspoon baking soda to the cooking water. If the beans are still hard after 2 hours of simmering on the stove, your beans may be too old.

Are chickpeas and garbanzo beans the same thing? ›

The name chickpea comes from the Latin word cicer, referring to the plant family of legumes, Fabaceae. It is also known by its popular Spanish-derived name, the garbanzo bean. Kidney beans, black beans, lima beans, and peanuts are other familiar foods found in this legume family.

Why are my roasted chickpeas chewy? ›

After a lot of recipe testing, I discovered the key to crispy crunchy was to dry roast the chickpeas first so they have a chance to get crispy and then season them at the last minute. Boom! Works every time.

Why are my chickpeas still hard after soaking and cooking? ›

My beans are not softening: If the beans are not softening, you may be using old beans, or your water is high in minerals (hard water). Add 1/4 teaspoon baking soda to the cooking water. If the beans are still hard after 2 hours of simmering on the stove, your beans may be too old.

Why are my roasted chickpeas soggy? ›

A few factors determine whether they'll turn mushy when roasted: the type of chickpeas (dried and soaked overnight or dried), how well they are dried before roasting and how much oil is used (you need only a little). You can soak your own chickpeas or use the ones in a can.

Should chickpeas be soft after cooking? ›

Stovetop method: Place the chickpeas in a large pot and cover by several inches with cold water. Bring to a boil, then reduce to a simmer and cook, covered, for 1.5 – 2 hours, or until soft (but not mushy).

How to make crunchy chickpeas reddit? ›

  1. Drain and rinse 1 can of chickpeas, remove any loose skins.
  2. Pat dry or sit out to dry. Once dry, drizzle with olive oil and sprinkle with salt. If the chickpeas aren't allowed to completely dry they won't crisp as well.
  3. Bake on 400 F for 20 minutes.
  4. Toss with whatever seasoning you'd like, sky is the limit!
